Have you ever tried a dish at a restaurant and knew that you just had to try making it at home? To me, that is the sign of a truly great restaurant meal. It creates a food memory and craving that you know immediately –this dish must be part of your life.  That is exactly how this Asparagus Chicken Flatbread Pizza was born.

That feeling happened when I visited Bella Brava in St. Pete, FL.  When I saw a pizza on the menu with a runny egg in the middle, my heart skipped a beat and I knew I had to try it. It did not disappoint and I left the restaurant, wondering how hard could it be to duplicate their flatbread pizza with a runny egg in the middle?

In all honesty, it proved to be a bit harder than I could have anticipated. One time I would try it and the egg would be too runny, the next time, I had cooked egg all the way through. As frustrated as I was, each time that I tried to duplicate the recipe, I added new ingredients, tweaked it just a bit and tried to perfect the time on the egg.

Asparagus and Chicken Flatbread Pizza #SundaySupper The end result is Asparagus Chicken Flatbread Pizza and it is fabulous. It may no longer resemble the original pizza that inspired me to make this dish at home, but the combination of flavors in this flatbread pizza — of this world!

Asparagus Chicken Flatbread Pizza #SundaySupper

Ingredients

  • 2 Toufayan Mediterranean Flatbreads or your favorite Flatbreads
  • 6 slices provolone cheese, sliced thin. You can also use 1 cup shredded mozzarella cheese
  • 1 cup chicken, shredded. Rotisserie chicken is perfect.
  • 1/2 pound roasted asparagus
  • 2 garlic cloves, sliced
  • 2 green onions, sliced thin
  • 2 tablespoons sun dried tomatoes, sliced thin (not the kind in oil)
  • 2 teaspoons olive oil
  • 2 eggs, optional

Instructions

  1. Preheat oven to 375.
  2. Position a rack in the upper third of an oven.
  3. Place the flatbreads on traditional pizza pan, the kind with the holes.
  4. Layer the cheese, chicken, asparagus and garlic on the flatbreads.
  5. Sprinkle the green onions and sun dried tomatoes over the over each flatbread.
  6. Drizzle olive oil evenly over each flatbread.
  7. If you are adding the eggs, make a little well in the middle of each and place the egg in the middle of each flatbread.
  8. Bake for approximately 15 minutes or until cheese is bubbly, flatbreads are crispy and the egg is cooked.

Hahaha I do that all the time… I try to recreate some of the amazing dishes I have at restaurants (or abroad) and I have a blast! This pizza looks divine! Love the idea of the runny yolk……. yummm!

This is so pretty…and I love egg on my pizza! Baking eggs can be tricky…I make shirred eggs, and the timing is tricky to make sure the yolks are running…without being TOO runny. Love this gorgeous flatbread!!

Yum, I’m making pizza tonight, I wish I had asparagus, that would be so very good! I hear that some people cook the egg however they want and slide it on the pizza when they are doing it at home because of the oven difference.
