Everyone has that super easy go to recipe that they can whip up in no time for dinner during a busy week. For me, broccoli ricotta pasta is that recipe and one of my favorites. I can remember trying it for the first time when my kids were little at a friends house. My kids weren’t crazy about broccoli but when this dish was put in front of them, they gobbled it right up. When I asked my friend Darlene how to make it, I couldn’t believe how easy it was. It has been a Weekday Supper staple in our home ever since.
Not only is this Broccoli Ricotta Pasta Recipe super easy, it is a great way to sneak broccoli into the kids diet.
Ingredients
- One head of Broccoli
- 3 tablespoons Olive Oil
- 1 teaspoon minced Garlic
- 16 ounce of Ricotta Cheese
- 1/2 cup grated Parmesan Cheese
- 16 oz Pasta of choice
- Shaved Parmesan Cheese for garnish if desired
Instructions
- Steam the Head of Broccoli
- Heat Olive Oil in large skillet
- Add Garlic and Broccoli and saute on high for 5 minutes
- Turn heat to low and using a fork, mash the Broccoli until Mashed
- Add the Ricotta Cheese and Parmesan Cheese, mix well
- Blend with Pasta & top with shaved Parmesan Cheese

I am not sure what you mean. Ricotta Cheese is added to the cooked pasta. Please let me know if I can help further.
