Broccoli ricotta pasta #weekdaysupper Everyone has that super easy go to recipe that they can whip up in no time for dinner during a busy week.  For me, broccoli ricotta pasta is that recipe and one of my favorites.  I can remember trying it for the first time when my kids were little at a friends house.  My kids weren’t crazy about broccoli but when this dish was put in front of them, they gobbled it right up.   When I asked my friend Darlene how to make it, I couldn’t believe how easy it was.  It has been a Weekday Supper staple in our home ever since.

Not only is this Broccoli Ricotta Pasta Recipe super easy, it is a great way to sneak broccoli into the kids diet.

Broccoli Ricotta Pasta
 
Ingredients
  • One head of Broccoli
  • 3 tablespoons Olive Oil
  • 1 teaspoon minced Garlic
  • 16 ounce of Ricotta Cheese
  • ½ cup grated Parmesan Cheese
  • 16 oz Pasta of choice
  • Shaved Parmesan Cheese for garnish if desired
Instructions
  1. Steam the Head of Broccoli
  2. Heat Olive Oil in large skillet
  3. Add Garlic and Broccoli and saute on high for 5 minutes
  4. Turn heat to low and using a fork, mash the Broccoli until Mashed
  5. Add the Ricotta Cheese and Parmesan Cheese, mix well
  6. Blend with Pasta & top with shaved Parmesan Cheese
