If I am to be completely honest, I have a love hate relationship with pie. You see, I love eating a deliciously rich pie, there is nothing more comforting. The combination of the crust with the delicious filling gets me every time. But since I admittedly am not a baker, I have a hard time getting excited about making the dough. Usually frustrated after a couple of attempts, I give up on that buttery golden crust.

But yet, I love pies. Nothing makes me happier than when there is a pie at a get together with friends. To me, they are the epitome of hospitality, love and make you feel welcome. Whether a sweet or savory pie, when we share a pie, it screams welcome, I am here for you, so glad you stopped by.

Pies evoke that warm and inviting feeling that is synonymous with a comforting memory. 

coconut cream pie recipe #SundaySupperThat is exactly how I will always remember Coconut Cream Pie. It takes me back to years ago. After an exhausting day of moving into a new home and that uneasy feeling that comes from shifting into a new situation, a neighbor showed up at our door with the most beautiful Coconut Cream Pie we had ever seen.

Her recipe for the filling is so delicious that I promise you can use a store bought pie crust. Unless of course, you decide you want to create your own delicious and buttery pie crust – by all means, who am I to tell you no? I will leave that for the baking experts.

Ingredients
  • ½ (15-ounce) package refrigerated piecrust
  • ½ cup sugar
  • ¼ cup cornstarch
  • 2 cups half-and-half
  • 4 egg yolks
  • 3 tablespoons butter
  • 1 cup sweetened flaked coconut
  • 2½ teaspoons vanilla
  • 2 cups whipping cream
  • ⅓ cup sugar
Instructions
  1. Fit 1 piecrust into a 9-inch pie plate according to package directions; fold edges under, and crimp. Prick bottom and sides of piecrust with a fork.
  2. Bake according to package directions for a one-crust pie.Combine ½ cup sugar and cornstarch in a saucepan.
  3. Whisk together half-and-half and egg yolks.
  4. Whisk egg mixture into sugar mixture; bring to a boil over medium heat for about one minute and remove from heat.
  5. Stir in butter, 1 cup coconut, and 1 teaspoon vanilla. let stand 30 minutes.
  6. Pour mixture into prepared crust, Place in fridge for 30 minutes or until set.
  7. Beat whipping cream at high speed with a mixer add ⅓ cup sugar and remaining 1½ teaspoons vanilla, until soft peaks form.
  8. Spread or pipe whipped cream over pie filling. Use a fork if go over the whipped cream in a circular pattern with a form if desired.
  9. Garnish, with maraschino cherries desired.

    What a sweet welcome to the neighborhood! Coconut cream was one of my paternal great-grandmother’s specialties, Isabel, but I’ve never tried to make it. Yours looks divine!

    Whenever I enjoy, read about, or even see a photo of Coconut Cream Pie, I think about my father’s craze for it. I’ve been on a search for some of the best recipes in his memory and this one will now be included in my recipe box! Thank you!

    My grandmother made this all the time and it was my favorite! Alas, her recipe has been lost and is mourned by the whole family. I’ve been on the hunt for a recipe like hers and I think you nailed it!!!!
