Grilled Sirloin Steak with Corn Tomato and Avocado Appetizer #SundaySupper

Have fun with this recipe. The showstopping is the Sirloin Steak. It is so fun to come up with different toppings.
  • Rub
  • 1 teaspoon powdered garlic
  • 1 teaspoon ground sea salt
  • ½ teaspoon paprika
  • ½ teaspoon chile powder
  • ¼ teaspoon fresh ground pepper
  • 4 center cut Certified Angus Beef ® brand sirloin steaks
  • 4 tablespoons olive oil
  • 1 loaf Cocktail Rye bread slices
  • Toppings:
  • 2 avocados, sliced and chopped
  • 2 cups fresh corn, cooked and cut from the cob - one ear of corn equals approximately ½ cup.
  • 2 cups grape tomatoes, sliced thin
  • 1 cup blue cheese or cheese or your choice
  • 1 cup cornichons or small pickles. I you can get cornichons, do. They add such a great flavor.
  1. Preheat the grill on high.
  2. In a bowl, mix the rub ingredients.
  3. Allow the steaks to stand at room temperature for 20 to 30 minutes before grilling.
  4. Brush the steaks with olive oil.
  5. Season the steaks with the rub, pressing the spices into the meat.
  6. Grill over direct high heat until cooked to desired doneness, 3 to 4 minutes on each side for medium-rare, turning once.
  7. Let rest for 3 to 5 minutes and slice thin.
  8. Preheat oven to 325º.
  9. Layer cocktail rye bread slices on a sheet pan and place in the oven for 2 to 3 minutes until crispy.
