Easy stove top Marsala Roast Beef #SundaySupper

Ingredients
  • 3 pound bottom round beef roast
  • For the rub: (optional)
  • 4 tablespoons spanish paprika (do not use smoked paprika)
  • 1 teaspoon coarsely ground black pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon coarse sea salt
  • For the Roast and Vegetables:
  • 1 large onion, sliced
  • 2 tablespoons canola oil
  • 3 cups of carrots, sliced thick or cut into sticks
  • 1 pound small mixed medley fingerling potatoes or potatoes of your choice
  • 6-8 radishes (optional) I really enjoy them roasted
  • 3 cups baby bella mushrooms
  • 1 leek sliced thin
  • 1 cup beef broth
  • 1 cup marsala wine
Instructions
  1. Combine the spanish paprika, black pepper, garlic powder, sea salt in a small bowl.
  2. Rub the beef tenderloin with the spice mixture. Give it a nice even coating and let it sit in the refrigerator overnight. While this step can be eliminated, I highly recommend it. It adds an amazing flavor to the delicious beef.
  3. Cover with plastic wrap and refrigerate overnight.
  4. Heat oil in a dutch oven or large stockpot.
  5. Sear roast for a couple minutes on each side over medium-high heat. The roast should be nicely browned on all sides.
  6. Add onion, carrots, potatoes, radishes (optional) to the bottom of the dutch oven.
  7. Top with mushrooms, leek and beef broth.
  8. Adjust temperature of low, cover dutch oven and cook for approximately 1.5 hours.
  9. Add marsala wine and simmer for an additional ½ hour.
  10. Slice roast against the grain or pull in bite-size pieces. Serve with reduced sauce.
  11. I love to add some pappardelle pasta to this and serve on a large platter along with the potatoes.
  12. Serve additional sauce in a gravy boat. This is a very light marsala sauce.
  13. It is an amazing combination of flavors.
  14. Garnish with parsley and parmesan cheese if desired.
