Creamy Spinach and Cauliflower Rice Recipe #SundaySupper #JuneDairyMonth

  • 2 cups (12 ounces) frozen cauliflower rice or 2 cups of cooked finely diced cauliflower
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 tablespoon minced garlic
  • 2 cups whole milk
  • 4 ounces cheddar cheese
  • 2 cups fresh spinach
  • Salt and Pepper to taste
  1. Squeeze the bag of frozen cauliflower rice gently to separate veggies. Pour contents of bag into large nonstick skillet.
  2. Cook over medium heat 5 minutes or until veggies are hot, stirring occasionally.
  3. While the cauliflower is cooking, melt the butter in a large non-stick skillet.
  4. Add the flour and minced garlic and cook for a few minutes until the mixture turns a golden color.
  5. Slowly add the milk; cook, stirring constantly, until mixture bubbles and thickens, 1 to 2 minutes.
  6. ADD cooked cauliflower rice and cheese to sauce in skillet; stir until cheese is melted.
  7. Stir in the spinach for another 2 minutes until the mixture is well blended and slightly bubbling.
  8. Stir in salt and black pepper.
  9. Top with your favorite protein and BBQ sauce if desired (optional)
