Nicole Humphrey Cook was born in Texas, raised and currently lives in St. Louis, Missouri. Nicole is a freelance writer, food blogger and tech support guru. Pam Clark is a fortysomething year old wife and mother who lives in Northern Florida with her husband, six year old son, 13 year old Shih Tzu, 2 year old guinea pig, and 3 month old Plott Hound/Lab Mix, all boys. It is this fact that she blames for her love of NASCAR, football and hockey. She wrote her first blog post on May 31, 2008, after seeing another online friend start a food blog to which she thought I could do that. It seemed like a natural fit, having always loved writing (she became a published poet in her teens) and now cooking, to combine the two. Now that she’s become more passionate about her family and home, not to mention the beginning of homeschooling with her son, her blog has metamorphosed into an online version of her, and she couldn’t be happier. Pam loves taking delicious homey recipes and making them wholesome and healthy for her family, and is now exploring the world of gluten free cooking and baking.
