Have I told you how much I love my FedEx guy?  Don’t tell my husband, but the highlight of my day is when I hear the doorbell ring knowing that my favorite guy is at the other end.   Last week, I almost kissed him!   I’ll admit it, it is not because of his looks or even his personality.   It is because of the beautiful deliveries he brings me.  Last week alone, he brought me Olive oil that I loved, fabulous wine and my all time favorite, this beautiful Chef’s Pan .  I almost invited him in to try some Portuguese recipes.

If you are Portuguese, rice is a staple in your home.  I grew up having not only Portuguese recipes, but Portuguese rice almost every night of the week.  The funny thing is all my friends loved my Mom’s Portuguese rice.   They couldn’t get enough of it and would tell everyone that Portuguese Rice was so different than regular American Rice.  I didn’t get it until the first time I had rice at a friends house and tasted minute rice. Ah! I got it.  My Mom does make the best rice in the world!

Although I don’t make the rice as well as my mom, my kids friends all say the same thing when they come over.  This Portuguese recipe is so simple that I don’t even know what makes it so good.  I couldn’t wait to try out my new Copper Fusion Chef’s Pan by Chantal  and thought Portuguese Rice would be the perfect recipe to test it on.  The Chef’s Pan is the perfect size for our family and it’s sloped sides and rounded shape,  is perfect for cooking rice.   I was shocked when my kids said, “Mom, this is the best rice you have ever made.  What did you do different?”

I am in love with this pan!   I love that the Copper Fusion Cookware can go from stovetop to table, and then directly into the refrigerator or freezer and into the dishware.  It is perfect for busy families like us. And if that wasn’t enough, it comes in Chili Red!  You won’t want to hide this baby in a cabinet.

So here is the secret to Portuguese Rice, do not stir it until it is cooked.  Yes, I am telling you to just put the lid on and don’t look at it again!

How to make Portuguese Rice

Portuguese Recipes are always simple and about the natural taste of the food. I guarantee you will never make minute rice again.
Ingredients
  • 2 cups uncooked long grain rice
  • 4 cups of water
  • 1 small onion, whole
  • 2 chicken bouillon
  • 1 teaspoon salt
  • 4 teaspoon butter

Instructions
  1. Bring the water to a boil and add the onion, chicken bouillon and salt
  2. Reduce heat to low and add the rice
  3. Cover and do not touch for approximately 30 minutes or until the rice is cooked and tender
  4. Remove the onion and discard
  5. Stir in the butter and serve…. I told you all Portuguese Recipes are simple!

I *love* that pan! Funny, my regular white rice is pretty similar, except I put in minced onion. I swear the trick IS in the “coasting” — I boil for 15 mins (no stirring), then turn off the burner and let it sit another 5-10 minutes undisturbed, then stir–it comes out more fluffy and never sticks!

I will have to try your Portuguese rice. It sounds so much butter than plain white rice. And I will remember…no stirring!

My favorite dish in the world is kimchee fried rice. My grandmother made the best. That’s why my blog is called crispy bit and burnt ends. The crispy bits and the burnt ends were my favorite. like the crispy bits on a good paella. Now I’ll have to try portugese rice. Thanks for sharing!

Ehehehe I’m Portuguese and I love rice in (almost) every possible way. But my favourite still is to soften a chopped onion in some olive oil, add the rice and fry it for a little bit, and finally add the water and some salt. =o)
