You all know how crazy we are about football in this house! We love it, live it… we are a true football family. As I write this post, my boys are getting ready for 8 on 8 Spring Football because playing just in the fall, JUST wouldn’t be enough. As you can imagine, Super Bowl Sunday is like a National Holiday around here. For me, the best part is the Appetizers! I seriously could live on appetizers. Our Super Bowl favorites are Pepperoni Pizza Dip, Skinny Chicken Bacon Bites, Apple Almond Baked Brie, Tomato and Mozzarella Appetizer. This year, we are adding a new Super Bowl Sunday Appetizer to our menu, Onion Cheddar Ciabatta Appetizer! It is so easy and it out of this world!
Ingredients
- 1 Large Vidalia or Yellow Onion
- 1 cup of Mayonnaise
- 2 cups of Sharp Cheddar Cheese (white or yellow)
- 1 long Ciabatta or French Bread sliced in half
- 1 tablespoon Paprika or Gypsy Gold Dust by Intensity Academy
Instructions
- Chop the Onion very fine using a food processor
- Mix Onion, Mayonnaise and Cheddar Cheese in large bowl
- Spread the Onion mixture over both sides of the Ciabatta Bread
- Sprinkle the Paprika the Onion mixture
- Bake at 400 degrees for approximately 20 minutes until the Cheese starts bubbling

yah, I’d probably want to eat the whole thing. What always amazes me is how versatile mayonnaise is–I’m not really a big fan, yet I find you can mix it with just about anything, pop it in the oven for a bit, and out comes deliciousness! It’s like a miracle food

Mmm, Isabel, this sounds yummy, but I am wondering – since the onions are copped so fine, do they get fully cooked? I don’t like raw onion flavor, but if they get cooked through, this sounds like a fabulous, easy appetizer.
