Tilapia Caramelized Onions Tomato and Goat CheeseAfter a busy week, sometimes it is those dishes that are so simple that are the most rewarding.  This dish is one of them.  I made this for Sunday Supper but honestly this Tilapia with caramelized onions, tomatoes, and goat cheese is perfect for a weeknight meal.  It cooks very quickly and is absolutely delicious!

I like to serve with sliced baked potato sprinkled with olive oil and sea salt and a garden salad.

Tilapia is one my favorite mild, often eaten, fish. Always looking for new ways to serve it, and your caramelized onion, tomato and goat cheese prep sounds fantastic! Can’t wait to try it!

This was a very easy and extremely delicious recipe. I added some avocado on top as well for an extra kick. I will definitely be making it again.

Here you go again making me hungry again LOL. This sounds great and might leave the tomatoes raw and add juice from a lemon on fish and then add everything else? But I love fish, thank you for the recipe!

I tried this but tweaked it a little bit. I used blue marlin instead of tilapia and used sun dried tomatoes instead of the fresh ones. My oh my, it was phenomenal and super yum! Thanks for posting this!
