Alexandra came home from college this weekend, and I love making something special to welcome her home. If you could believe it, she loves Salmon as much as I do. When I made Salmon with Tomatoes, Onions, Olives and Capers last week, I couldn’t help but miss her and wish she was home to enjoy it with us. So, I decided to surprise her when she came home this weekend and made Walnut Crusted Salmon Cakes for the first time.
We served the Walnut Crusted Salmon Cakes over Orzo Pasta and topped them with Parsley Garlic Caper Sauce. My oh my, they were incredible! It was the perfect way to welcome my college girl home from school and spend an afternoon Around the Family Table!
Ingredients
- 4 tablespoons Canola Oil
- 1 small Onion, finely chopped
- 2 stalks of Celery, finely chopped
- 4 tablespoons chopped fresh Parsley
- 2 cups cooked Salmon
- 2 Eggs, lightly beaten
- 3 teaspoons Dijon Mustard
- 1 cup ground Walnuts
- Sea Salt & Ground Pepper to taste
Instructions
- Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley; remove from the heat.
- Place Salmon in a medium bowl and flake.
- Add Egg and Mustard; mix well.
- Add the Onion mixture.
- Add Salt and Pepper and mix well.
- Shape the mixture into 12 patties, about 2 1/2 inches wide and place on baking sheet.
- Top each Salmon Cake with 1 tablespoon of chopped Walnuts
- Bake the Salmon Cakes at 375 degrees for 15 minutes
- Broil the Salmon Cakes for 5 minutes
- Serve over Orzo or Rice with Parsley Caper Sauce if desired

What made these Salmon Cakes so delish… there was no bread filler and no mayonnaise. We let the flavor of great ingredients shine through, and they were incredible!

Thank you for this recipe Isabel. I’ve had success with a Food Network recipe for salmon cakes several times which contains a potato filler. Next time, I believe I’ll be making yours because as you say the ingredients allow the salmon to shine.
